To celebrate the opening weekend of Avengers: Endgame, we did a dinner for Avengers: Infinity War. And no, there's no spoilers for End Game but there are for Infinity War... It's been a year, what do you expect!
For dinner we had Soul Stone Meat Balls, Purple Power Salad, Green Beans with Thyme (Time) and Almonds, Mind Stone Pineapple Slices, Reality Stone Cocktail, Space Stone/Tesseract Cookies.
Soul Stone Meat Balls
(AKA the orange stone)
While these are super messy, they are also delicious!
I found this recipe here and tweaked it. It was supposed to be a little bit more orange but I really wanted to use my brother-in-law Bill and Megan's homemade cranberry-orange marmalade. For a more orange look, just go with plain orange marmalade (but it won't be as good!).
Ingredients:
For the meatballs:
1/4 cup of milk
1/4 cup of Panko breadcrumbs
1.5 lbs ground turkey
2 cloves garlic, minced
2 teaspoons of fresh grated ginger
2 Tablespoons of scallions
2 Tablespoons of soy sauce
1/4 teaspoon of salt
1/4 teaspoon of black pepper
For the sauce:
1.5 teaspoons of sesame oil
2 teaspoons of olive oil
2 cloves of garlic, garlic
1 teaspoon of fresh grated ginger
1.5 teaspoons of chili powder
1 cup of cranberry orange marmalade
1/3 cup of hoisin sauce
Directions:
1. Preheat the oven to 500 degrees and spray a muffin pan with cooking spray.
2. In a small bowl, stir milk and Panko breadcrumbs together and let sit for 5 minutes.
3. In a large bowl, combine, turkey, garlic, ginger, scallions, soy sauce, salt, pepper, and soaked breadcrumbs. Mix together, shape into balls and place into cupcake tins.
4. Cook meatballs for 12 minutes or until golden brown.
5. Create the sauce by adding the sesame oil and olive oil in a small saucepan over medium low heat.
6. Add garlic, ginger, and cook, stirring for about a minute or until golden brown.
7. Add chili powder, cranberry orange marmalade, hoisin sauce, and . cook for five minutes until sauce has thickened.
8. Remove meatballs from oven and transfer to serving dish and cover with sauce.

Purple Power Salad
(AKA the purple stone)

Ingredients:
4 Tablespoons of sesame oil, divided
1 cup of diced kale
3 cups of diced purple cabbage
1 cup of quinoa
3/4 cup of walnuts
1/2 cup of goat cheese
2 Tablespoons of soy sauce
1/4 cup of plain greek yogurt
2 Tablespoons of honey
1 pinch of black pepper.
Directions;
1. Cook quinoa according to package directions, I used a rice cooker and it worked like a charm.
2. Combine two tablespoons of sesame oil and kale in a large mixing bowl. Massage the oil into the kale leaves for two minutes to reduce bitterness.
3. Add cabbage, quinoa, walnuts and goat cheese (crumbled) and toss to combine.
4. For the dressing, combine 2 Tablespoons of sesame oil, soy sauce, yogurt, honey, and black pepper. Stir together until smooth.

Green Beans with Thyme (Time) and Almonds
(AKA the green stone)
I found this recipe here and tweaked a bit.
Ingredients:
2lbs of green beans
1 clove of garlic, minced
1/4 cup of sliced almonds
2 tablespoons of olive oil
4 teaspoons of chopped fresh thyme
1 teaspoon of salt to taste.
Directions:
1. Preheat oven to 425 degrees.
2. Toss green beans, garlic, sliced almonds, olive oil, thyme and salt in a baking dish.
3. Cook for 12 minutes.

Mind Stone Pineapple Slices

Reality Stone Cocktail
(AKA the red stone/aether)
I found this recipe here and changed it a bit.
Ingredients:
1oz Crown Royal
1oz Bicardi Rum
1oz Amaretto
Fill with Cran-Raspberry Juice
Garnish with a raspberry

Space Stone Cookies
(AKA the blue stone inside the Tesseract)
I found this recipe here and altered it a bit.
Ingredients:
1/2 cup of butter, softened
3/4 cup of sugar
1 egg
1 teaspoon of vanilla extract
1.5 cups of flour
1/4 teaspoon of salt
1 teaspoon of baking powder
1/2 teaspoon of baking soda
1 teaspoon of cream of tartar
1/2 cup of blue sprinkles
10 drops of blue food coloring
Blue Jolly Ranchers (the more you find in your bag the better!)
Directions:
1. Preheat oven to 350 degrees.
2. Combine butter and sugar for a minute.
3. Mix in egg, vanilla, flour, salt, baking powder, baking soda, and cream of tartar slowly.
4. Add food coloring and mix well.
5. Roll dough into balls and roll into blue sprinkles covering the cookie.
6. Place on baking sheet and cook for 8 minutes.
7. Hammer/crush the jolly ranchers
7. Cool for 1 minutes and place pieces of the candy on each cookie.
