Cars Dinner

For dinner tonight, we have a Cars Themed Dinner! KACHOW!!!




For dinner we had the Pit Crew's Wheel Pasta, Mater's Taters, A Cozy Cone of Popcorn, An Auto Beverage Bar (with Dinoco Oil, Antifreeze, Windshield Wiper Fluid and Rusteze), and for dessert we have Luigi's Leaning Tower of Tires.






Pit Crew's Wheel Pasta:
1 Box of Wheeled Pasta
1 jar of Bertolli's Rosa Pasta Sauce
Extra Virgin Olive Oil
Salt
Parmesan Cheese

Boil water with about a tablespoon of Extra Virgin Olive Oil.
Salt the water with a pinch of salt
Once boiling, add pasta for eight minutes.
Strain and transfer back to pot.  
Toss pasta with whole jar of pasta sauce and add Parmesan Cheese to taste. 


Mater's Taters:
Buy frozen Tater Tots
Preheat oven to 450 degrees
Cook for thirteen minutes
Turn broiler and cook for 4-5 more minutes.





Cozy Cone of Popcorn:
Use orange construction paper and make a cone.  Staples and tape required!
Fill with Popcorn (add butter if you want!)





Auto Beverage Bar:
I found logos online and printed them off.  I attached them to each bottle.
Dinoco Oil: Dr. Pepper
Antifreeze: Mountain Dew
Windshield Wiper Fluid: Calypso Ocean Blue Raspberry 
Rusteze: Calypso Strawberry Lemonade






Luigi's Leaning Tower of Tires:
I just bought a package of donuts! 



It was a super fun (and EASY) dinner!!  




Aaaaaaaaaaand I'm probably going to have "Life is a highway" stuck in my head all week.

The Jungle Book Dinner




We did a fancy dinner this week for the Jungle Book!  We invited over our friends Trina, Ed and Piper.  They were informed on arrival that by eating the dinners, you are going to be in pictures for the blog!  Hahaha!  Trina's favorite movie is The Jungle Book!  (Ed requested Pulp Fiction for the future but they'll probably need a babysitter for that one!!!)


For this Indian (and mostly gluten free!!!) Extravaganza we made Indian Butter Chicken, Kaa's Lemon Riccccccccccccce, Shere Khan's Naan and Hummus, Mowgli's Mango Pineapple Rum Smoothie, and King Louie's Banana Split Bar.



Indian Butter Chicken:

I was a little nervous to make this dish because I hadn't ever had it before but it was a hit!! This recipe is also Gluten Free!

Ingredients:
4 tablespoons of vegetable oil
2 shallots, chopped
1 white onion, chopped
4 tablespoons of butter
4 teaspoon of lemon juice
2 tablespoons of garlic paste
2 teaspoons of ginger powder
4 teaspoons of garam masala spice
2 teaspoons of chili powder
2 teaspoons of ground cumin
2 bay leaves
1/2 cup of plain yogurt
2 cups of half and half
2 cups of tomato puree
1 teaspoon of cayenne pepper
1 teaspoon of salt
1 teaspoon of pepper
4 chicken fillets, cubed
2 tablespoons of cornstarch
1/2 cup of water 
(A LOT OF INGREDIENTS!  WOWZERS!!)

Directions:
1. Heat 2 tablespoons of oil in a large pot over medium high heat.  Saute shallot and onion until translucent.
2. Stir in butter, lemon juice, garlic paste, ginger, 2 teaspoons of garam masala, chili powder, cumin, and bay leaves.
3. Cook and stir for a minute then add the pureed tomato and cook for 2 more minutes. 
4. Add in half and half and yogurt.  Reduce heat to low and simmer for 10 minutes.  Add in salt and pepper.  Remove from heat and set aside.
5. Heat 2 tablespoons of oil in a large skillet over medium heat.  Cook chicken until lightly browned.
6. Reduce heat, and season with 2 teaspoons of garam masala and cayenne.
7. Add chicken to sauce and add water and cornstarch.
8. Cook for five more minutes and serve.

We also served Piper seasoned chicken without the spicy sauce or cayenne.

*Just make sure you don't serve your guests the bay leaves!!! 


Kaa's Lemon Riccccccccce:
This recipe is gluten free!

Ingredients:
1 cup of yellow split peas
2 cups of rice, cooked (I used my beloved rice cooker!  
1/2 cup of lemon juice
2 teaspoons of salt
1 teaspoon of ground turmeric
4 tablespoons of vegetable oil
1 red bell pepper, chopped
2 teaspoons of black mustard seeds
6 tablespoons of grated fresh ginger
1 green chili pepper, finely chopped
1 tablespoons of minced lemon peel

Directions:
1. Boil salted water in a small pot.  Once boiling, turn down to low and add the peas.  Let soak for 30 minutes.  When done, drain water. 
2. Combine lemon juice, salt, and tumeric in a small bowl and set aside.
3. Heat oil in a skillet over medium-high heat. Add red bell pepper and mustard seeds for 2 minutes.
4. Add in the split peas and lemon juice mixture. Reduce heat and simmer for 2-3 minutes.
5. Add ginger, green chili pepper, lemon peel and rice.  Then serve.



Shere Khan's Naan and Hummus:
I used the same hummus recipe in the Aladdin dinner: Jasmine's Hummus
We also had Naan and Gluten Free Crackers!




Mowgli's Mango Pineapple Rum Smoothie:

Ingredients:
2 1/2 cups Frozen Mango
2 1/2 cups Frozen Pinapple
15 dates
2 1/2 cups of Ice 
5 cups of Coconut and Almond Milk
8 oz Rum for those 21 and above

*Makes 4 rum smoothies and one virgin smoothie.

Directions:
1. Put ingredients (except for rum)in blender and blend. 
2. Add 2oz of rum for each smoothie for those who partake!  




King Louie's Banana Split Bar:
We had five people and they could choose their toppings from:
5 Bananas
Vanilla Ice Cream
1 cup of Walnuts
1 jar of Maraschino Cherries
1 bar of World Market's Indian Sweet Curry Milk Chocolate with Pink Himalayan Sea Salt, crumbled. 
Chocolate Syrup
Caramel Sauce


It was a great evening!  Piper even put on a little fashion show for us!

Parks and Recreation Dinner

We are celebrating finishing "Parks and Recreation" after about a month of binge watching!!  While watching the show, I realized I had a Tammy 2 dress and that Tim has a red polo shirt like Ron.  We also had mustaches on a stick… We're weird..


We had a breakfast themed dinner because as Ron says: "Why do people ever eat anything other than breakfast food?"  

Because people are idiots..


For dinner we had Ben's Calzone's, Ron's All the Bacon and Eggs You Have Eggstravaganza, Chris Traeger's "LITERALLY the best" acai bowl, Tommytown Express Cocktail with Snake Juice, and JJ's Leslie Special.

Ben's Calzones:
We just got frozen calzones that we baked for 35 minutes and they were pretty decent.



Ron's All the Eggs and Bacon You Have Eggstravaganza:
Tim made scrambled eggs with salt and pepper (about 8 eggs) and 8 strips of bacon.  


YUM! 



Chris Traeger's "LITERALLY the best" acai bowl:

Ingredients: (makes 2)
1 pack of Refreshe Wild Berry Smoothie Mix
2 Tablespoon of Chia Seeds
2 Bananas, sliced
1/4 cup of Honey
1 1/2 cup of Granola
1 cup of Frozen Berries
2 cups of ice
1 cup of Acai juice
1 cup of coconut/almond milk

Directions:
1. Mix Smoothie Mix, Chia seeds, honey, frozen berries, ice, acai juice, and coconut/almond milk
2. Pour into bowl
3. Mix in granola and one banana per bowl

For just Snake Juice: 1 part brandy, 1 part vanilla liqueur, 1 part Kaluha

For the full drink (please be careful!): 
1.5 oz Brandy
1.5 oz Vanilla Liqueur
1.5 oz Kaluha 
6oz of Chocolate Stout
6oz of Coffee Energy Drinks




And in Leslie fashion instead of having dessert we just had the JJ Leslie Special… obviously WAFFLES!!!

Cinderella Dinner

To prepare for the upcoming live action Cinderella- we watched the 1950's Cinderella!  AND I am SOO excited for the movie!! 




For dinner we had After Midnight Pumpkin Risotto, Jaq and Gus's Cheese Tray, Anastasia and Drizella's Envious Green Beans, Glass Slipper Cocktail, and to top it off, Glass Slipper Cupcakes. 





The After Midnight Pumpkin Risotto: I found a great recipe and adapted it here http://www.pineappleandcoconut.com/recipes/creamy-maple-bacon-pumpkin-risotto/

Ingredients:
4 sliced of Bacon, Diced
2 cups of Apple Juice
4 cups of chicken broth
Leeks (one bundle)
4 garlic cloves, minced
2 cups of rice
1 cup of white cooking wine
1/4 freshly grated nutmeg
1 tsp of sea salt 
1/2 tsp of ground black pepper 
1 1/2 cup of pumpkin puree 
Dried Parsley 
Grated Parmesan Cheese

Directions:
1. In a deep pot cook bacon for about 10 minutes until crispy and well done.  Remove and drain out most of the bacon fat.  
2. In the remaining fat, cook the leeks for about 8 minutes.  They don't caramelize the same as onions, so you'll want to keep an eye on them to avoid burning!  
3. Add in garlic and nutmeg for about a minute.
4. Add rice and wine.  Stir until rice soaked up.
5. Add in 1/2 cup of chicken stock. Stir until absorbed.
6. Add in 1/4 cup of apple juice.  Stir until absorbed.
7. Repeat until you've used 4 cups of chicken stock and 2 cups of apple juice.
8. Mix in Pumpkin Puree, maple syrup, bacon, salt, pepper, parsley to taste, and a little parmesan cheese





Jaq and Gus's Cheese Tray:
Tim is the KING of cheese trays.  This is what he put together!

Harvarti with Caraway
Creamy Gouda with Basil and Garlic
White Stilton with Cranberries 
Sun dried Tomato Water Crackers
Water Crackers baked with Roasted Garlic and Herbs
Plain Water Crackers
Salami
Prosciutto 




Anastasia and Drizella's Envious Green Beans:
Cook 2 cups of frozen green beans in salted boiling water for about six minutes.  Serve while hot.





Glass Slipper Cocktail:

1 Part Whipped Cream Vodka
1 Part Hypnotiq
1 Part Gatorade Cool Blue
Fill with Cream Soda




Glass Slipper Cupcakes:

I will admit… these gave me a pretty hard time!!! The cupcakes got so large that I had to trim the outside rim of each cupcake.  The frosting was too runny and I had to add more powdered sugar.  PROCEED WITH CAUTION!

Ingredients:
Cupcake:
1 1/4 cups of cake flour
1 1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 large eggs
3/4 cup sugar
1 1/2 tsp
1/2 cup vegetable oil
1/2 cup of buttermilk

Frosting:
8oz Cream Cheese
4 drops Blue Food Coloring
2.5 cups powdered
1.5 cups of heavy whipping cream
1/2 tsp vanilla extract

Pirouettes Cookies
Milano Cookies
Blue Pearl Sprinkles

Directions:
1. Preheat oven to 350 degrees and line a cupcake tin with liners.
2. In a kitchen aid mixer, beat two eggs for 30 seconds.
3. Add sugar and beat for 30 more seconds
4. Add vanilla and vegetable oil and beat for a minute
5. Add buttermilk while on low.
6. Add cake flour, baking powder, baking soda, salt until well mixed.
7. Pour batter into lined muffin pan until each one is 1/2 full.  (I didn't listen to this part… shame on me.. they sorta exploded everywhere…
8. Bake for about 14 minutes and set aside until cool.  Once cool begin decorating. 

Frosting:
Whip the whipping cream on high sped until fluffy and add the rest of the ingredients in until stiff.

Spread frosting with a rubber spatula over the cupcake.  
Cut the Pirouettes to resemble the heel of a stiletto. 
Using the white icing as glue, assemble shoe, milano cookie, and pirouette cookie.  
Then top with sprinkles!



Not flawless but pretty good!


This movie got me pretty excited for the live action one!!

Tron and Tron: Legacy Dinner

Tim was in charge of today's theme dinner.  We did a double feature of Tron and Tron legacy which was surprisingly hard to come up with food ideas but he did an awesome job!


We HAD to get some glow sticks from the dollar store!  


We had a great meal!  We had Master Control Pizza, Encom CD RAM-en, Sea of Simulation Jell-O, Tron's Cocktail, and Identity discs for dessert!

Master Control Pizza:
We bought two pre-made Bertolli pizzas.
Preheat the oven to 450, add your toppings and cook for 11 minutes.  

On pizza one we had Bertolli Red Pizza Sauce, Mozzarella Cheese, Shredded Cheddar Cheese, Hard Salami, and Pepperoni.


On pizza two we had Creme Friache, Mozzarella Cheese, Proscuitto, and dried cherries.
They were both AMAZING!  (Pizza two was my favorite!)



Encom CD RAM-en Grid:
We fully embraced our college years and made some good ol' packaged ramen.



Sea of Simulation:
I just made yellow and blue Jell-O.  Yellow for CLU and blue for TRON


Tron's Cocktail:
Found the recipe for that one here but it didn't turn out super blue.. so I tweaked it a bit: http://www.thedrunkenmoogle.com/tagged/kingdom+hearts+drink

1 oz Midori
2 oz Blue Curacao
1 oz Pineapple Juice
Fill the rest of your glass with sprite.  


Identity Discs

Ingredients:
4 Tablespoons of Butter
10oz of big marshmallows
6 cups of Rice Krispies 

Directions:
Spray a 9x11 pan with Pam
Melt butter on low heat
Add Marshmallows and stir until melted
Add Rice Krispies until fully coated
Transfer to the 9x11 pan
Spray a spatula with Pam to pack down the mix.
Let sit for an hour
Cut into circles and decorate with frosting


We had an excellent meal!!
