A Goofy Movie Dinner

For Memorial day weekend, Tim and I had a stay-cation and decided to do a dinner to one of his favorite cartoons, A Goofy Movie!  



For dinner we had P.J.'s Gooey Pepperoni Cheese Pizza, Leaning Tower of Cheese-A, Max's "Hi Dad" Soup, Powerline Cocktail, and Goofy's Perfect Cast 

Cupcake.




P.J.'s Gooey Pepperoni Cheese Pizza


Ingredients:

Original Pizza Crust
Red Pizza Sauce
Mozzarella
Pepperoni

Bake according to instructions on the pizza crust packaging.





Leaning Tower of Cheese-A

Cheese in a can with some Ritz crackers




Max's Hi Dad Soup

Alphabet Vegetable Soup




Powerline Cocktail

2oz of Captain Morgan's Rum
A splash of Tequila
Fill with Powerade (blue)




Goofy's Perfect Cast Cupcake

For the Cupcake I used my chocolate cupcake recipe I used for The Lorax Dinner

Cream Cheese Frosting:
Ingredients:
8oz of Cream Cheese
1/2 cup of Unsalted Butter
2.5 cups of Powdered Sugar
2 teaspoons of Vanilla Extract
4 drops of Teal gel food coloring

Combine until fluffy.

Decorating:

Mini M&Ms 
Eye ball sugar decorations

Pirates of the Caribbean: Curse of the Black Pearl Dinner

YARRRRR!  As we be preparin' for "Tomorrowland", we decided to do a dinner for another Walt Disney Themed ride (technically Tomorrowland is a land and not a ride but you get the point!) with PIRATES OF THE CARIBBEAN: Curse of the Black Pearl.  



Tonight, we had a fabulous Caribbean Grilled Chicken, Barbossa's Apples, Tortuga Johnny Cake, Port Royal Punch and some Cursed Gold Dabloons.


YUMMMM!!! 






Caribbean Grilled Chicken
I found a Bahamian recipe here and we slightly adapted because we don't have a grill!

Ingredients:
6 halved chicken breasts
1/2 cup of lime juice
1/4 cup of vidalia onion, finely diced
1 small bundle of green onions, thinly sliced
2 cloves of garlic, minced
1 habanero chile, de-seeded and finely chopped
1 teaspoon of dried Thyme
2 tablespoon vegetable oil
1 tablespoon of paprika
1 teaspoon of salt
1/2 teaspoon of white pepper, ground

Ingredients for cooling sauce:
1/3 cup of sour cream
1 tablespoon of lime juice
1/2 teaspoon of paprika
1/2 teaspoon of sugar
1/4 teaspoon cayenne pepper
1/8 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon allspice


Cooling sauce picture.


Directions:
1. Rinse the chicken and pat dry. Place in a bowl and pour lemon juice over it. Marinate for 15 minutes
2. Mix the cooling sauce ingredients together and refrigerate.
3. Pour out lime juice from chicken and add the remaining chicken ingredients and marinate for 45 minutes.
4. Turn on your burner to Medium-high heat and place chicken on the skillet for 7-8 minutes on each side. 
5. Remove from heat and serve with cooling sauce on the side. 





Barbossa's Apples: the finest Granny Smith Apples Safeway had. 




Tortuga Johnny Cake:
Found the recipe here and adapted it slightly.

Ingredients:
2 cups of flour
1 teaspoon of salt
3 teaspoons of baking powder
1/2 cup of corn meal
1/4 cup of sugar
3 teaspoons of vegetable oil
1 cup of milk

Directions:
1. Preheat the oven to 375 degrees
2. Mix ingredients together (in a mixer would've been the easiest…. I wasn't prepared for that!)
3. Spray a 9x9 pan and pour the mix in. 
4. Using a spatula, flatten the mix
5. Cook for 30 minutes
6. Cut and serve with butter and honey




Port Royal Punch:
Since the recipe we have served 25, we decided to at least fourth it! 

Ingredients:
23 oz of pineapple juice
1 cup of mango juice
200 mL of Captain Morgan Original Spiced Rum
2 oz of grenadine
9 oz of Sprite
Orange slices 

Mix it all up and enjoy!  This one certainly does pack a punch!!!




Cursed Gold Dabloons were chocolate coins for the Target dollar store!

How I Met Your Mother Dinner

In honor of Mother's Day we are doing a "How I Met Your Mother" dinner!  We picked some of our very favorite episodes and compiled a wonderful menu!




We had Marshall and Ted's Sub Sandwiches, Slutty Pumpkin Soup, The Pineapple Incident Salsa, The Dirty Mother Cocktail, and Sombitches Cookies.






Marshall and Ted's Sub Sandwiches
As you probably remember, when Ted tells his children stories that have to do with him and his friends smoking an illegal substance, they replace it with sandwiches. I adapted this recipe.

Ingredients: (makes six)
6 Hoagie Rolls
Salami
Pepperoni
Sliced Honey Ham 
Thin Sliced Mozzarella 
1/2 stick of butter
1 teaspoon of Italian seasoning

Directions: 
1. Preheat oven to 350 degrees
2. Mix butter and Italian seasoning
3. Assemble sandwich with the rest of the ingredients
4. Bake for 10 minutes






Slutty Pumpkin Soup
I'm sure you remember the Slutty Pumpkin from the Halloween Party that Ted has been dying to meet!  She inspired this soup!  We bought an awesome Sweet Potato and Pumpkin bisque in a box and it was sure tasty!






The Pineapple Incident Salsa:
If you recall there is an episode when Ted gets pretty drunk and he wakes up in the morning and must retrace his steps to find out what happened last night.  His evidence is a stranger in his bed and a pineapple.  I found the recipe here and adapted it. 

Ingredients:
1 Mango
1 cup of pineapple
2 red peppers
1 sweet onion
6 Roma tomatoes 
1/4 cup of Cilantro
1 teaspoon of thyme
1 teaspoon of rosemary
1/2 teaspoon of salt
1/2 teaspoon of pepper

Directions:
Assemble and mix well.
Serve chilled. 






The Dirty Mother Cocktail
I'm sure Barney created this one!
1 part Tequila
1 part Kahlua 
1 part Whipping Cream







Sombitches cookies
The Mother gives Lily these cookies on the Jitney on their way out to the Hamptons.  Found and slightly altered this recipe

Ingredients:
1 cup butter, softened
1 cup sugar
1 cup brown sugar
1 cup creamy peanut butter
2 large eggs
1 teaspoon of vanilla extract
2 cups of flour
1 teaspoon of baking soda
1/2 teaspoon of salt
Rolos

Directions:
1. Preheat the oven to 350 degrees
2.Combine butter, sugar, brown sugar, creamy peanut butter until smooth.
3. Add eggs and vanilla and beat until blended.
4. Stir together flour and baking soda and salt.
5. Chill in the fridge for 10 minutes. 
6. Take a Rolo and surround with dough. 
7. Bake for 12 minutes.

These cookies were the BOMB!!!





The episodes we watched were: The Slutty Pumpkin, The Pineapple Incident, Swarley, Slapbet, Showdown, Slapsgiving, Naked Man, Slapsgiving 2: Revenge of the Slap, Tick Tick Tick, and P.S. I love you.  Obviously the Slapbet and Robin Sparkles factored prominently in our decisions!

Star Wars Episode IV: A New Hope Dinner

MAY THE FOURTH BE WITH YOU!



This is a fabulous holiday for Star Wars fans!  We are a Star Wars household!  We have tons of Star Wars Legos and an Ewok stuffed animal.  




We had a LOT of fun with this dinner!



We had Han Burgers, Star Wars Jell-O Jigglers, Darth Vader Taters, Vaderade, and Princess Leia Danish Buns. YUM!





Han Burgers: 
Ingredients
Potato Hamburger Buns
1 lb. of ground beef
What ever toppings you want! 





Vader Taters: 
Tater tots from the frozen section.  Prepare according to packaging




Star Wars Jell-O Jigglers: 
Prepare jello according to box and pour into Jell-O mold






Vaderade:
4oz Vodka
Fill with Gatorade
*This is wicked strong… a smarter lady would have started with 2oz… we were just at the end of our bottle and I got a little excited.  




Princess Leia Danish Dos:
I had an elaborate recipe that slowly started to crumble.  Luckily, my husband saw this coming… and bought some cinnamon rolls in a tube!  Thank goodness!!!

The Avengers Dinner

In preparation for Avengers: Age of Ultron, we did a themed dinner to the first Avengers!  





We were thrilled to have guests, who have been able to join us for a few of them, my brother-in-law Bill and his favorite gal, Megan!  





For dinner we had Captain America's Pizza Shield, Thor Hammers, The Hulk pudding, Black Widow cocktail, and Iron Man hands.







Captain America's Pizza Shield 

Ingredients:
Pre-made pizza crusts
Pizza Sauce
Mozzarella Cheese
Swiss Cheese
Shredded Cheddar Cheese
Pepperoni

Directions:
Cover crust with pizza sauce.
Top with mozzarella cheese.
Create two rings of pepperoni.
In the center of the pizza put shredded cheddar cheese.
Cook for nine minutes.
While cooking, cut out a star our of a swiss cheese slice.
Place in the center once the pizza is out of the oven.





Thor Hammers

Ingredients:
Pretzel Sticks
Cubed (or more like rectangle..) Cheese







The Hulk Pudding

Ingredients:
2 boxes of 3.9 oz Instant Pistachio Pudding
4 cups of milk 
10 Thin Mints, crushed
Black icing (for the face)







Black Widow Cocktail
Adapted this recipe.

Ingredients:
2 oz of Kaluha
2 oz of Vodka
Fill with Starbucks espresso drink






Iron Man Hands
I used the same cookie recipe that I used in both our Breaking Bad and Toy Story 2 dinners. 


For the different colors of dough, I took out about 1/3 of the dough to leave the regular dough color and the 2/3 I left in the mixture and added about 10 drops of red food coloring.

This was a tricky cookie because I took my hand shaped cookie cutter and cut out the hand, then I took my circle cutter and out a circle in the middle.  I did this until the red dough was gone- about 8 hand cookies.  Then I took the plain colored dough and cut circles out. I baked them separately but in hindsight I should've put the plain dough in the center of the red and baked them together… I had to do some trimming of all the cookies after baking them.  

After putting some icing on, they look pretty dang good!





It was a great dinner!  Can't wait to see Avengers: Age of Ultron tomorrow!!
