Thumbelina Dinner


Now- a dinner for one of my very favorite non-Disney animated movies: Thumbelina!



We had a great meal:  Parisian Croque Monsieur, Mother's Walnut Ravioli, Ms. Fieldmouse's Carrots, Mr. Mole's Potato Burrows, (Once There Was The) Sun Punch, and Fairy Cakes!
      





Mother's Walnut Ravioli
I used this recipe here and tweaked a bit! 

Ingredients:
1lb of Chicken Breast (cut in small cubes)
1 teaspoon of salt
1 teaspoon of pepper
1 teaspoon of paprika
1 teaspoon of onion powder
1 teaspoon of garlic powder
1 teaspoon of thyme
1 Tablespoon of vegetable oil
1 pkg of ravioli
1/2 cup of walnuts
4 Tablespoons of butter
1/3 cups of sage leaves

Directions:
1. Preheat oven to 350 degrees.  
2. Combine salt, pepper, paprika, onion powder, garlic powder, and thyme.  Add cubed chicken and cover all sides.
3. Heat olive oil in a skillet, add chicken and cook thoroughly.  
4. Cook ravioli to package directions.
5. In another skillet, melt 4 Tablespoons of butter.  When the butter starts to brown, add sage leaves.  Stir for a minute.  Add walnuts and stir for another minute. 
6. Add ravioli and chicken.  
7. Enjoy!






Parisian Croque Monsieur
I got the recipe here and slightly adjusted. 

Ingredients:
2.5 cups of milk
1/3 cup of flour
1/3 cup of butter
1 pinch of nutmeg
1 pinch of white pepper
salt to taste
12 slices of french bread
6 slices of ham
1/2 cup of Gruyere cheese

Directions:
1. In a saucepan, add butter and melt over medium heat.
2. When butter starts to bubble, add flour and whisk to create a roux.
3. Cook for 2 minutes on low heat.  
4. In a separate pot, bring the milk, nutmeg, white pepper, and salt to a simmer. 
5. Slowly incorporate the roux and cook for 8 minutes while whisking constantly as not to burn the bottom. (Bechamel sauce)
6. Preheat the over to 350 degrees.
7. Toast the bread
8. Spread the Bechamel sauce on the toast, add a slice of ham, and a slice of Gruyere.  Add another piece of bread, add more bechamel sauce on top of the sandwich and a slice of Gruyere on top.
9. Place sandwich on a baking tray and cook in the oven for 8 minutes. 








Mr. Mole's Potato Burrows
I used the same recipe from our Groundhog Day Dinner.





Ms. Fieldmouse's Carrots
I found this recipe here and tweaked a bit. 

Ingredients:
1.5lbs of baby carrots
2 Tablepoons of olive oil
2 Tablespoons of dark chocolate balsamic vinegar
1/4 teaspoon of parsley
Salt and pepper to taste.  

Directions:
1. Preheat oven to 400 degrees.
2. Line a cookie sheet with parchment paper and spray with olive oil.
3. In a medium bowl, add balsamic vinegar and slowly add olive oil while whisking.
4. Pour balsamic mixture over carrots and dump onto a cookie sheet.
5. Cook for 30 minutes- remove from oven and transfer to a bowl. 







(Once There Was The) Sun Punch
I used this recipe from the Tangled dinner. 








Fairy Cakes
I used this recipe here and they were delicious! 

Ingredients:
1/2 cup of butter, slightly softened
1/4 cup of sugar
1/4 teaspoon of almond extract
1.25 cups of flour
1/4 teaspoon of salt
4 teaspoon of nonpareils (fancy word for sprinkles but these won't melt)

Directions:
1. Preheat oven to 325 degrees.
2. Line an 8 inch square dish with parchment paper. 
3. Combine butter, sugar, and almond extract in a medium bowl- beat at medium speed until creamy.
4. Reduce speed and add flour, salt, and nonpariels.
5. Knead mixture in a bowl until dough forms a ball.  Pat dough evenly and use the overhang to lift the dough out of the pan.  
6. Cut the dough into 1/2 inch squares.
7. Gently place the squares onto an an ungreased cookie sheet.  Bake for 15 minutes until the bottom is brown.
