Coco Dinner

We've finally done a themed dinner for Coco!  This movie is so good.  I mean it's so good that I almost don't care that I've seen it 1,200 times.  If you haven't had the opportunity to watch it, it's on Netflix and you won't be disappointed!




For dinner we had Papa Hector's Chorizo, Tamales, Frida Kahlo's Papaya, Spiced Coco, Poisoned Drink, and Ernesto De La Cruz's Guitar.  It was delicious!


Papa Hector's Chorizo
Tim cooked this up on a skillets until done




Tamales
I used this recipe and adjusted slightly.

Ingredients:

2 Tablespoons of olive oil
4 cups of salsa verde
3/4lb of chicken
16 corn husks
2.5 cups Masa Harina
2 cups of warm water
1 teaspoon of Baking powder
1/4lb of shortening 
3/4 cups of Chicken broth
1.5 teaspoons of salt 
1 teaspoon of onion powder
1 Tablespoon of garlic powder

Instructions:

1. In a crock pot, add olive oil, salsa verde, and chicken.
2. Cook on low for 6 hours. 
3. In a large bowl, combine masa, salt, baking powder, onion powder, and garlic powder
4. Add warm water
5. Knead the dough (in Kitchen aid with dough hook)
6. Add shortening and stock.  Beat dough until soft. 
7. Refrigerate for a half hour.
8. Soak the corn husks in warm water for a half hour and drain water.
9. Smear a layer of masa in each corn husk.
10. Add a tablespoon of chicken filling.
11. Fold in thirds lengthwise and fold up the bottom. 
12. Repeat for all corn husks and set aside.
13. Place the steam rack on the bottom of the Instant Pot.
14. Add 1 cup of water
15. Place all tamales on the rack standing upright.
16. Lock the lid in place and turn the valve to SEALING.
17.  Set the Instant Pot to pressure cook at high pressure 35 minutes. 
18. When completed, let steam release for several minutes.
19. Turn valve to venting and once all steam is out, remove lid very carefully.
20. Let cool for 5 minutes and enjoy!

The Adventures of Ichabod and Mr. Toad Dinner

To get in the spooky holiday spirit, we did a dinner for The Adventures of Ichabod and Mr. Toad!   It was very festive and a movie we weren't super familiar with!

For dinner we had Mr. Winkie's Beer Braised Ribs, Mr. Toad's Wild Rice Soup, Ichabod's Trail Mix, The Great Pumpkin Beer, and Headless Horseman's Pumpkin Pie.
  






Mr. Winkie's Beer Braised Ribs
I found this recipe here and adapted. 

Ingredients:
3lbs of Short Ribs
2 Tablespoons of Olive Oil
1 onion, diced
4 garlic cloves, smashed
1-12 oz black porter beer
2 cups of chopped celery 
2 cups of chopped carrots
1/4 cup of parsley
1 Tablespoon of dried thyme
1 Tablespoon of dried sage
4 Tablespoons of cornstarch
Salt & Pepper

Combine ingredients all together in a crockpot and cook on low for 6 hours. 










Mr. Toad's Wild Rice Soup
We found store bought Panera wild rice that was actually pretty good!







Ichabod's Trail Mix

Ingredients:
White cheddar popcorn
Apple chips
Pretzel sticks
Pumpkin candy corn
Halloween M&Ms

Mix together.

Incredibles 2 Party (Maddie's 2nd Birthday)

For Maddie's 2nd Birthday we did a brunch for Incredibles 2!  Since Maddie is TOTALLY Jack-Jack- we thought it was pretty appropriate!
           


For Brunch we had The Happy Platter Breakfast Casserole, Bob's Incredible Waffles, Incredible Fruit Plate, Powerful Punch, Edna Mode's Coffee, Excellent Tap, Cookie Nom Nom, and Jack Jack's Ice Cream Cake. 





The Happy Platter Breakfast Casserole

I found this recipe and we loved it _ it did use WAY too many eggs for what we wanted to do.  The picture makes it looked burned but it was actually perfect! 

Ingredients:
1lb of Jimmy Dean Sausage Crumbles
1/2 of a red onion
30oz of Hashbrowns
1.5 cups of Shredded Marble Jack Cheese
4 Eggs 
1/2 cup of Milk
Salt and Pepper

Directions
1. Combine all ingredients in dish
2. Cook for 35 minutes at 350 degrees. 





Bob's Incredible Waffles

Eggo Waffles for all!  We also had Maple and Blueberry Syrup for people to use.

Blackberries, Strawberries, and Bananas are perfect for Incredible colors!

We did a Ginger Ale with a Cranberry Juice - it was so refereshing.

Pocahontas Dinner

FULL TRANSPARENCY: We did this dinner a LONG time ago.  Actually this dinner was done before we had kids AND before we were married.  It was one of the first few that we did before the blog.  I found these pictures and realized that we never posted our great dinner for Pocahontas!  

For dinner we had Bison Burgers, Pocahontas' Golden Corn, Fry Bread, One with Nature Cocktail, and Berries of the Earth Mini Tart.



Bison Burgers
We found Bison burger patties at the grocery store and made them up!  Delicious!







Pocahontas' Golden Corn
We steamed the corn for 4 minutes and served with butter




One with Nature Cocktail
4 parts Baileys
2 parts Frangelico
1 part of Amaretto
1 part of Cinnamon Schnapps 

*this was spectacular AND deadly.






Mini Berries of the Earth Tarts

Ingredients:
Puff Pastry
Raspberry Jam
Brie Cheese 

Directions:
1. Preheat the oven to 350 degrees
2. Cut (thawed) puff pastry into squares
3. Push squares into cupcake tins so they create a type of bowl
4. Cut cheese into cubes and place one in each pastry bowl
5. Spoon jam over the cheese
6. Bake for 9 minutes

Cinderella (Animated) Breakfast

Here is a Cinderella breakfast we did to get ready for Disney World! 

We had Pumpkin Carriage Pancakes with Pecan Maple Syrup, Pumpkin Wheel Donuts, Cinderella's Breakfast Granola, Fairy Godmother Fruit Wand, and a Glass Slipper Cocktail.

Pumpkin Carriage Pancakes with Pecan Maple Syrup
We found this recipe here and my mom made them! 

Ingredients:
1.75 cups of flour
2.5 teaspoons of pumpkin pie spice
1 Tablespoon of baking powder
1/2 teaspoon of baking soda
1/8 teaspoon of salt
1/4 cup of brown sugar
1/4 cup of vegetable oil
2 eggs
1.25 cups of buttermilk
1/2 cup of pumpkin puree
1/2 cup of chopped pecans
1 cup of maple syrup
1 tsp of cinnamon

Directions:
1. Whisk together vegetable oil, brown sugar, buttermilk, and pumpkin puree until mixed.
2. Add salt, baking powder and baking soda.
3. Add flour and pumpkin pie spice- let dough sit for 15 minutes. 
4. Heat pan to medium heat and cook for a few minutes on each side.
5. Pour maple syrup into microwave safe serving dish and add cinnamon.
6. Heat syrup in microwave until desired temperature.
7. Since we have a food allergy in my family, serve pecans on top of pancakes as desired.

Cinderella's Breakfast Granola
We got this recipe from our Disney Princess Cookbook.

Ingredients:
Honey Greek Yogurt 
Granola
Banana Slices
Cranberries
Sunflower Seeds
Dried Apricots

Mix together to your liking. 






Fairy Godmother Fruit Wand
Use raspberries, blueberries, and banana slices to create your very own wand. 


Glass Slipper Cocktail
1oz Blue Curacao Cocktail Mix
Champagne
Corn Syrup
Sugar

Directions:
1. Dip champagne glass in corn syrup then in sugar
2. Pour Curacao mix in glass and fill with champagne

Enchanted Dinner


We did a dinner for Enchanted with Gramma Cinny!  We had a blast and the girls dressed up like princesses.  It was a lot of fun and helped us get ready for our Disney trip.


For dinner we had Robert's Hot Dogs, Date Night Pizza, Pip's Nut Mix, Nathaniel's Appletini, and New York Cheesecake Cookies.

Well it was raining we watched this movie- so boiled hot dogs it is (boiled is fine but grilled is best!)

We got a frozen pizza and cooked it up to package directions.

Nathaniel's Appletinis

1oz Vodka
1oz Sour Apple Schnapps
1oz Apple Juice
1 Cocktail Cherry





New York Cheesecake Bites

I found the recipe here and they didn't turn out nearly as beautiful but they were still tasty! 

Ingredients:
1 sleeve of crushed graham crackers
1 cup of flour
1.5 teaspoons of baking powder
1 stick of butter, softened
1 egg, separated
3 oz of cream cheese, softened
1/4 cup of sugar
1/2 teaspoon of vanilla extract

Directions:
1. Preheat the oven to 350 degrees.
2. Stir together graham cracker crumbs, flour, and baking powder in a large bowl.
3. In a separate bowl, mix butter and brown sugar together.
4. Add egg white and mix well.
5. Add graham cracker mix and mix well.
6. In yet another bowl, mix cream cheese, sugar, egg yolk, and vanilla until well mixed and set aside.
7. Using a large spoon scoop out graham cracker mix on to a baking sheet and flatten slightly using your thumb.
8. Spoon the cream cheese mixture into the cookies
9. Bake cookies for 12 minutes.
