Frankenweenie Dinner

For Halloween we did a Frankenweenie Dinner!  We watched the original short and the full length claymation and had a blast!



For dinner we had Frankenweenies, Dog Bone Bread Sticks, Elsa Van Helsing's Black Olives, Victor's Concoction, and Halloween Cookies!  




Frankenweenies:

We made the hot dogs according to package directions and used mustard, Monterey Jack cheese, and a pretzel to make it look cool!






Dog Bone Garlic Bread Sticks:

These are crescent rolls that instead of rolling up like a crescent roll, I rolled them out and tied knots on the end like dog bones.  Sprinkle with garlic salt and bake according to directions!




Elsa Van Helsing's Black Olives



Victor's Concoction
2 oz Midori 
Pineapple Juice to taste
1 oz Vodka
Sprite to taste

*Pregnant Katie had the pineapple juice with sprite.  No Midori and Vodka!

This was an amazingly easy dinner!  And still so much fun!

Snow White and the Seven Dwarfs dinner

While we are still in October, we decided to celebrate our own little Oktoberfest by watching Snow White and the Seven Dwarfs.  We had some great German foods themed to the classic!   We actually did this dinner before we started blogging and I think it's better this time around!



For dinner we had German Jaegerschnitzel, Doc's Spaetzle, Oktoberfest Beer, Snow White's White Hot Chocolate, The Evil Queen's Apple Dumplings, and Diamonds from the Mine.  Sehr Gut!!!


German Jaegerschnitzel
We tweaked this recipe here.

Ingredients:
3 boneless, thin pork chops
1 large egg
1/2 cup of flour
1/2 cup of Panko bread crumbs
Salt and Pepper
Vegetable Oil

Directions:
1. Lightly season the pork on both sides with salt and pepper.
2. Cover the bottom of a skillet with oil and heat on medium high heat
3. Place the flour, egg, and breadcrumbs in 3 separate bowls.
4. Dip the pork chops in the flour, the egg, and the bread crumbs to coat both sides
5. Once the oil is hot, fry the schnitzels for about 2 or 3 minutes on both sides.  
6. Once cooked, transfer for a plate lined with paper towels






Doc's Spaetzle
Last year we cooked this and I almost had a melt down.  It was tasty but it was a lot of work.  This year I found it prepackaged.  So we just made it according to box directions.




Oktoberfest Beer
Tim couldn't resist busting out his German stein his buddy John got for him in Germany!  





Snow White's White Hot Chocolate
I got this recipe from the Disney Princess Cookbook Tim got for me!

Ingredients:
1/3 cup of white chocolate chips
1/3 cup of whipping cream (not heavy)
1.5 cups of milk
1/2 teaspoon of vanilla extract
Dash of cinnamon
Marshmallows

Directions:
1. Mix white chocolate chips and light cream in a small saucepan and warm over low heat (I set mine at 3) until chips melt, stirring the whole time.
2. Stir in the milk and vanilla extract.  Turn heat up to a medium heat continuing to stir until desired temperature.
3. Remove from heat and whisk the hot chocolate until the top is foamy.
4. Pour mixture into two mugs
5. Add desired amount of marshmallows and cinnamon.



The Evil Queen's Apple Dumplings
Recipe from the same cookbook as the White Hot Chocolate.

Ingredients:
1.5 cups of flour
1 teaspoon of baking powder
1/2 teaspoon of salt
1/2 teaspoon of nutmeg, divided
6 tablespoon of cold butter
1/2 cup of milk
1 peeled apple (cut into quarters)
1/2 cup + 2 tablespoons of brown sugar 
1/4 cinnamon
1 cup of hot water

Directions: 
1. Heat the oven to 375 degrees.  Spray a 9inch square baking pan with cooking spray.
2. To make the dough, mix together flour, baking powder, salt, and nutmeg in a mixing bowl.  Cut 3 tablespoons of butter into small pieces.
3. Use your hands to knead the dough together.
4. Stir in the milk.
5. Flour a surface and knead the dough until it holds together and dust the top with flour.  Roll out into a 12 inch square (mine was more of a circle)
6. Cut the dough into four equal squares and place one quarter of apple in each square.  
7. Take a tablespoon of butter and quarter it.  Place one quarter in each square. 
8. In a small bowl, mix together 3 tablespoons of brown sugar, cinnamon, and 1/4 teaspoon of nutmeg.  Spoon equal amounts of mixture in each square.
9. Gather three corners of dumpling together and pinch together.  Put all four in the baking dish.
10. Combine hot water, the remaining brown sugar, and 2 tablespoons of butter, melted.  Stir and pour over the dumplings in the pan.
11. Bake for 20 minutes until golden brown.
12. Spoon more syrup over the top. 
13. Serve warm

Tangled Dinner

Well we have officially been doing these dinners for a year!!! Since we started blogging the dinners a few months after we began, we are doing some repeats of ones that were prior to the blog!  We did a dinner for Tangled and it's even better than the first time!! 





We had a fabulous dinner of Mother Gothel's Hazelnut Soup, Rapunzel's Angel Hair Pasta, Ham and Cheese Biscuit Braids, Sun Punch, and Rapunzel's Towering Parfaits




Mother Gothel's (Pumpkin) Hazelnut Soup
I tweaked this from a recipe from the Disney Christmas Cookbook that you can buy here.

Ingredients:
2 Tablespoons of Olive Oil
2 Shallots
1/2 teaspoon of salt
3 cups of Chicken stock
1 cup of applesauce
1/4 teaspoon of pepper
1/8 teaspoon of nutmeg
15oz canned pumpkin puree
2 tablespoons of brown sugar
1/2 cup sour cream
1/4 cup of Panko crumbs
1/5 cup of chopped hazelnuts 

Directions:
1. Dice the shallots
2. Put 1.5 tablespoons of Olive Oil in a large pot over medium heat
3. Once the oil simmers, add the shallots and the salt.  Cook until translucent and tender (about 7-8 minutes)
4. Add the chicken stock, applesauce, pepper, nutmeg, pumpkin puree, and brown sugar
5. Simmer for 15 minutes
6. Add sour cream and stir to combine
7. In a small pan, heat remaining oil over medium heat. 
8. Add bread crumbs and stir until they are crisp and golden (3minutes)
9. Pour in hazelnuts and toast for 2 more minutes. 
10. Put soup in each bowl and top with the desired amount of hazelnut mixture.
11. Enjoy!!






Rapunzel's Angel Hair Pasta
Cook pasta according to box directions. 
Top with butter and parmesan cheese





Ham and Cheese Biscuit Braids
I got this recipe from the Disney Princess cookbook and changed a few things. You can buy the book here! 

Ingredients:
1 cup of Flour
1/4 cup of cornmeal
2 tsp of baking powder
1/2 teaspoon of salt
3 tablespoons of butter
1/4 cup of diced ham
1/3 cup of shredded Cheddar cheese
1/2 cup of milk

Directions:
1. Heat the oven to 400 degrees
2. Stir together flour, cornmeal, baking powder and salt in a bowl
3. Cut up cold butter into several small pieces
4. Mix in butter with flour mixture and working in the butter with your hands
5. Stir in ham and cheese
6. Add milk and work the mixture with your hands until it starts to look like dough
7. Sprinkle some flour on a cutting board and on your rolling pin. 
8. Roll out dough until about a 1/2 inch thick and cut in half.
9. Cut each half into nine long pieces (18 total)
10. Use three strips for each biscuit and braid (should have six total)
11. Place each braid on a cookie sheet and bake for 11 minutes 
*note that don't really turn as golden brown as you'd expect.  Check the bottom after about 11minutes.  






Sun Punch
Found in the same cookbook as the Biscuit Braids, just altered it a bit.

Ingredients:
2 cups of lemonade
2 cups of orange juice
3 cups of seltzer water
Orange slices




Rapunzel's Towering Parfaits
Found in the same cookbook as the Sun Punch and Biscuit Braids 

Ingredients:
Lemon Pudding
Blackberries
Cool Whip

Layer your parfaits in this order: lemon pudding, blackberries, and cool whip and repeat!




We had a great dinner!  So fun to revisit old meals!
